Deliciously Decadent Vegan Pumpkin Streusel Bread

Shut the front door….that is just how freaking delicious this bread is. I told you I would fall victim to “Pumpkin Season” sooner or later, didn’t I? It was almost like those were a gateway to Pumpkin Town. This recipe is sooooo good that I made not just a loaf of bread, but muffins as well. If you have teenagers, you will fully appreciate the fact that anything in need of slicing or similar prep required prior to stuffing it into your face…well it deters them from attacking that item as quickly as they may other items available.

Vegan Taco Meat

My family looooves tacos. I think there is something special about sitting down to a table filled with bowls of toppings, where no matter how young or old you are, you get to create the perfect taco with JUST the right toppings. This is where I am quite boring. I like lettuce, tomatoes and onions. That’s it. I will always have one hard shell, and one soft burrito shell. It’s the perfect blend of spicy flavor mixed with my business as usual self.

Football is back and even though it is still high 90’s here in Florida, Football = Fall. And Fall = comfort food heaven. While some will Pumpkin Spice the heck out of everything, (and yes, I will eventually break down and pumpkin it up) I look forward to baking stuffing, even when its not Thanksgiving, anything in the crockpot where it can spend all day, and corn muffins, Nothing says fall like Deliciously Crumbly Corn Muffins, especially with a touch of Earth Balance Buttery Spread.

I don’t think I could describe the love my family has of peanut butter and chocolate together. In fact, most times it is completely acceptable and encouraged to gift each other with varying peanut butter chocolate candies on holidays. Since I started my journey to eating completely vegan, my family has been super supportive and willing to try pretty much anything I put in front of them. Our youngest daughter has been a vegetarian for some time now, but that leaves my husband, teenage son and adult daughter still open to eating a traditional diet of meat and dairy. It has been the hardest on our son, mostly because as a typical 15 year old, his ideal menu would consist of burgers and pizza. Probably together.

I seriously love good music. I mean, that music that when you turn it up – you can feel it. I think that is why I have always had so much fun going to concerts. I try to think as far back as I can remember, taking in all of those great shows. There were some doozies, of course. Like I have to admit my first concert was…wait for it…the New Kids on the Block. I have a feeling most others my age probably have the same embarrassing statistic attached to them. My favorite show ever, and I don’t expect it to ever lose its status as the number one spot – Beastie Boys. Yes…I waited 30 long years to see them and it was the single.greatest.moment.ever. (After the kids and marriage and all of those expected greatest moments ever.)

Blueberry Almond Tart – Vegan Dessert

My youngest daughter is a blueberry addict. Regardless of the season, you will always find a glass bowl full of rinsed and ready to eat blueberries in our refrigerator. It always makes me smile when I walk in and catch her with the fridge door wide open, munching on just a couple blueberries at a time. For a 14 year old – I am half amazed that she wouldn’t rather be drinking soda by the liter, but then I remember she used to order side salads and yogurt parfaits instead of Happy Meals.
