Before I tried this sandwich, there were just 2 ways I liked my avocados. #1 – as the secret ingredient in chocolate frosting and #2 – in photographs. You see…I do find avocados to be beautiful, but I never actually LIKED avocado. I have tried. I WANT to like them. I want to like guac, I want to be able to eat avocado from the flesh and I want to want avocado on everything. But it just isn’t happening for me. What kills me is that you hear constantly about the health advantages to be had from eating avocados, but that I was just too much of a weenie to embrace the superfood. Until now my friends….until now.

Lesson learned – do not browse Pinterest while on a juice cleanse. I think I might have pinned hundreds of recipes that looked delicious while I was deep into day 3 of green juice. This gem was a product of hunger pinning, and was one of the recipes that I still wanted to make once I was back to eating real food! Many thanks to Bailey Rae at The Local Vegan for inspiring me to get back on track with blogging, because this recipe was too good not to share! I made just a couple of tweaks to her original recipe BBQ Bean Sandwiches and Smokey Green Beans and this will for sure become a repeat dinner.

So let me start by saying that I had an AMAZING weekend! We spent Saturday at the Orlando VegFest, and it was my first time every going. I had come across the website for the VegFest about 3 or 4 months ago, and had it bookmarked on my phone and on my calendar every since. I made sure my hubby had the day off to go with me, and our youngest daughter was even excited to go too. I have to say, when I woke up yesterday, it felt a little bit like Christmas…that is how excited I was!

This week is flying by so quickly! I cannot believe it is already Thursday – it feels like it was just yesterday that I was blogging away all weekend. So just a quick post for tonight – a couple of this weeks highlights.

2. Spent some time volunteering as part of a work event – who doesn’t count volunteering as a highlight?

3. VEGFEST! Orlando VegFest is this Saturday – it feels like it was months ago that I put this date on my calendar and I am so excited that it is almost here!

Cheesy Basil Vegan Lasagna

So it’s been a minute since I have had the opportunity to write a post. Maybe closer to 2 of those minutes. Blogging is a hobby of mine, where I can bring together my love of cooking and photography and to share recipes that I have made and truly loved. Most often, this means planning my menu so that I can write a post around the most special dishes on the weekend, after my work week has ended. Well last weekend was just a little nuts – and that is the only excuse that I have. Our youngest daughter attended the Glozelle Festival in Orlando, where she was able to meet Miranda Sings and Frankie Grande – a couple of her favorite youtube stars. And, my favorite reason for the lack of a post….I talked my husband into building my indoor herb shelving.

Sweet Potato & Black Bean Enchiladas

When I first began researching vegan recipes – I happened to find this amazing blog – Oh She Glows by Angela Liddon. I don’t doubt that you have already visited or follow it, because it is amazing! If you haven’t checked it out – don’t wait. Her recipes are amazing, her photography gorgeous, and she has a wide variety of dishes that are perfect for any occasion. She recently published The Oh She Glows Cookbook and it was the very first vegan cookbook I owned. Of course I sent the preorder link to my husband, and as the wonderful man that he is – it was delivered promptly upon release.

Creamy Vegan Alfredo with Peas

Let me be honest – I love cheese. I do. I ate cheese my entire life and enjoyed every ounce of it. When I started my vegan diet it was for the diet. I wanted to feel better – and it worked. While I was in my trial stage I started to educate myself on more of the ethical side of veganism, and the more that I learned, the more that I knew I wanted to pursue a vegan diet for more reasons than that it made me feel good. And that is when I had to have a serious talk with cheese. Like we need to break it off, but it’s not you it’s me…or actually it is you, and it’s me too. Whatever. I struggle with wanting to eat cheese on the daily and I am first to admit it. Hello Cheesy Vegan .

Spinach and Artichoke Biscuit Bake – Vegan Dinner

Spinach and artichokes are both pretty much main staples in our house. With the exception of Jonathon (who would rather eat ramen noodles vs vegetables), everyone loves both of these delicious veggies! I’ve found many great recipes that incorporate both spinach and artichokes, but most seem to be lunch-y or snack-y. This recipe is a great combination of that snack like taste, but makes for a filling dinner.

Vegan Sweet Potato Chili

Actually a pretty nice little Saturday. We’re going to Home Depot. Yeah buy some wallpaper, maybe get some flooring, stuff like that. Maybe Bed Bath and Beyond… I don’t know! I don’t know if we’ll have enough time!” I don’t know how many times this line from Old School has described what I would consider to be the perfect weekend day. Vegan Taco Meat

My family looooves tacos. I think there is something special about sitting down to a table filled with bowls of toppings, where no matter how young or old you are, you get to create the perfect taco with JUST the right toppings. This is where I am quite boring. I like lettuce, tomatoes and onions. That’s it. I will always have one hard shell, and one soft burrito shell. It’s the perfect blend of spicy flavor mixed with my business as usual self.
