OK, so famous is a strong word, but Most Requested just didn’t have the same ring to it. This Mac Salad has turned full on carnivores into Just Mayo junkies. It’s the one recipe that friends and family have asked for time and time again. The funny thing is, it’s just so simple that I never would have thought about blogging it. It’s almost bewildering to me that something we make probably twice a month, and enjoy with the kids alongside a cookout of veggie burgers or tofurkey dogs…something we take for granted – could actually be….shall I say it….sought after? I know, it sounds ridiculous. And I totally would not be even posting it here if it weren’t for my dear friend Kristen who kept saying I needed to do this. It might also partly be because I am afraid that she will show up on my doorstep to get her own helping if I don’t get this done! Kristen – this post is for you!
Are you ready to celebrate? Prepare for Cinco de Mayo with this tasty 7 Layer Dip! I’ll admit – I have been holding on to this recipe since making it for the Super Bowl…yikes it has been a long time! [Read more…]
How is it already Sunday? This past week has been crazy, and I am just finally settling down and catching up blogging. There are times when I wish that all that I did was blog – and there are times when getting to write a post is at the bottom of my to do list. This makes me appreciate even more all of those folks who are doing this full time – it takes so much energy to stay engaged and inspired sometimes! But today – I am excited to share this yummy Pineapple Chili Zoodles recipe, inspired by SOulFresh reader Lorien Mahay.

Today I just wanted to share a quick post on 3 of the easiest ways you can make and enjoy ZOODLES – zucchini noodles!
I’m not sure which I love more – eating the cookie dough or eating the cookies. One perk of being a vegan is that you can totally eat all the dough you want to – and you won’t get “Don’t eat that, there’s raw eggs in it!”. Watch me eat it all – and love every second of it! When it comes to the baked cookies, mine have to be soft and chewy. I know there are some folks who prefer their cookie to be crispy and crunchy…well that is just wrong. Chewy is where it’s at – and this recipe is perfect!
Just stopping by to share a super quick post! I know it has been a little while, and I wish I have had more time to not only play with some recipes, but to take pics and take the time to get everything loaded up! Time has not been on my side.
This recipe comes as a little bit of a prequel to a new zoodles recipe I will be sharing very soon! If you missed it, SOulFresh was able to give away a brand new Veggie Spiralizer – and we asked for our readers favorite zoodle recipes as part of the fun!
So it has been a hot minute since I have had the chance to sit down and write a blog post – my gosh! But, I promise it’s for good reason! We just got back from a quick getaway to Key West – so it has taken me a couple of days to get caught back up in all things this crazy life. The worse part of not having the time to blog is knowing that I have been hanging on to this recipe – and the worse part of hanging on to a recipe is thinking about how delicious that recipe was, and wanting to share it with everyone! I will get to this recipe ASAP, but I definitely want to share some pics from our trip as well!
Sometimes you just need chocolate in your life. And when you need chocolate in your life, the last thing you want to do is spend a lot of time making that happen. Luckily these cookies are super simple, from recipe to oven to mouth in under 30 minutes total AND – you probably have all of the ingredients in your pantry as we speak. Especially if you’re like me and you have bags of vegan chocolate chips stashed in varying cabinets, hidden from the view of teenagers! [Read more…]
