Vegan Sweet Potato Chili

Actually a pretty nice little Saturday. We’re going to Home Depot. Yeah buy some wallpaper, maybe get some flooring, stuff like that. Maybe Bed Bath and Beyond… I don’t know! I don’t know if we’ll have enough time!” I don’t know how many times this line from Old School has described what I would consider to be the perfect weekend day. It just so happens that this past Sunday was one of those days.

Over the past week we purchased a new ceiling fan for our bedroom, and new lights for outside our garage and set them aside to install on Sunday. We also spent a little too much time prepping our fantasy football teams for gameday and intended to watch RedZone for far too long… Plus we have family dinner night each Sunday. Are you tired just reading this? I am. So the perfect dinner for such a day? Chili in the crockpot of course!
We bought our house as a spec model in a newer development so when you look up and down the road you will see the same white plastic lights anchoring every single garage door. These poor lights are so cheap that one time when our neighbor was power washing, the water hit one of his lights and it just fell apart. Naturally we added the lights to our “To Do” list and spent far too long driving around looking at what looked good on other houses, and balking at how much one light would set us back at Home Depot. I was delighted to find these lights at a decent price and they perfectly accent our house colors all at the same time. Goodbye cheap plastic lights!
There is something about adding sweet potatoes and cacao powder to a spicy combination of tomatoes and beans that makes a magical pot of chili even non vegans will go back to for seconds.
We installed the fan, we installed the lights out front, we watched ohhh about 7 hours of football and had a successful family dinner along with this for dessert. Ya, you could say we rocked Sunday.

One of the great things about this recipe is the quick prep. I was able to throw all the ingredients together early on, and toss them into the fridge until I was ready to start the crockpot. The seasonings are perfectly balanced and the cacao powder just compliments the kick.

I even splurged and used my organic cinnamon for this recipe. It’s like a prized possession – I add 2 shakes into a cup of warm lemon water each morning. The first time I tried organic cinnamon, I felt like the last 30+ years were a lie. It’s just that much better.

Vegan Sweet Potato Chili

Prep Time: 15 minutes

Cook Time: 4 hours

Yield: 6-8

Ingredients

  • 1 red onion, diced
  • 1 green pepper, diced
  • 2 medium sweet potatoes, peeled & diced
  • 4 garlic cloves, crushed & diced
  • 1 Tbs chili powder
  • 1 tsp cumin
  • 1 tsp cayenne
  • 2 tsp cacao powder
  • 1/2 tsp cinnamon
  • 28 oz. diced tomatoes
  • 1 can black beans, rinsed
  • 1 can kidney beans, rinsed
  • 2 cups vegetable broth
  • Salt & pepper to taste

Instructions

  1. Combine all ingredients in crockpot, ensuring diced sweet
  2. potatoes are completely submerged.
  3. Cook on medium setting - this can vary due to range in crockpots
  4. Stir occasionally and continue to cook covered for about 4 hours or until sweet potatoes are soft.
  5. Serve with your favorite toppings.
